Organic winter cabbage: Dottenfelder Dauer. Brassica oleracea var. capitata.
A large firm late maturing, white, round, smooth leaved cabbage. Stores well, lasting many months.
How to grow:
Start winter cabbages in a brassica seed bed or in modules in April, plant out/transplant when large enough, spacing of 50cms. The heads can weigh up to 1.5kgs when mature.
Keep slugs and pigeons off them especially when small. The cabbage butterflies will love them come August, so covering with enviromesh, or something like it will save you picking off many little caterpillars.
Favourite ways to eat them:
Very good for raw, fermenting or cooked.
Developed at Dottenfelder-hof by Dietrich Bauer. We visited Dottenfelder-hof in 2016 on a tour of vegetable seed breeding fact finding. A thousand year old monastery, massive buildings, clean fields, enormous compost heaps and using bio dynamic methods of production.
